Christmas is on the horizon and people are starting to count down the shopping days left, while here at The Spitting Pig we’re busy taking orders for festive hog and spit roasts. One of our Yuletide specialities is a turkey spit roast with all the trimmings, what with turkey being so fashionably traditional at Christmas; it just wouldn’t be the same without it. In this country, for as long as anyone can remember, turkey has been up there with Santa, mince pies and the Queen’s speech as something that defines the Christmas holidays. Talking of mince pies, we bake delicious homemade ones that we serve as part of our Christmas menu, along with tasty, hot, mulled wine.
However, it is still currently autumn, and that means we’re also busy catering lots of parties and events with a wide variety of other menus, and that includes our winter warmer. Take a slow-roasted hog (or a spit-roasted animal or bird if you prefer) and add freshly-cooked seasonal vegetables to create your own winter warmer dish, and you can also add your choice of potatoes and a lovely, homemade gravy, too. There are so many combinations that you can choose from.
For Sian’s birthday party earlier today at her home, we provided a stunning hog roast Chobham centrepiece as well as herby roasted vegetables. First of all, we needed to get the hog itself roasting away, and that meant scoring it, adding plenty of water to it and then rubbing salt all over the skin (which is how we get the crispy crackling). Once it was ready, we turned the machine on, set the temperature and kept a keen eye on the beast while it cooked.
Once the hog roast Chobham has been sizzling away for a few hours, we combined fresh butternut squash, red peppers, and cauliflower florets, sprinkled them generously with olive oil and various herbs, and roasted them in a tray in the hog roasting machine, right underneath the hog. Sian had also asked us to prepare our tasty homemade onion gravy, and bring along plenty of condiments in case the guests asked for some.
Once the guests had all arrived, the queues began and we got the carving knives ready to slice into the meaty goodness. Another great event for Hog Roast Chobham.
